Mulberry pigment
Mulberry is mature collective fruit of Morus alba L,which are planted in most provinces and areas of China. Mulberry red pigment is a kind of anthocyanin pigment extracted from mulberry. It is a safety, not poisonous edible natural pigment. The red pigment has a maximum absorption wavelength at λ(subscript max)=480 nm. The suitable solvent for the extraction is ethanol. The properties of the pigment were not affected by common food addictive, cane, essence, preservative, VC and ions of Mg(superscript 2+), Al(superscript 3+), Ca(superscript 2+), Cu(superscript 2+), Fe(superscript 3+). Antioxidant activities of mulberry pigment were evaluated by determining the total antioxidant capacity , inhibitory effect of lipid per-oxidation , as well as scavenging effects to .OH , DPPH. and ABTS+ , which generated by different systems. Mulberry red pigment extract had strong antioxidant activities on inhibiting to lipid per-oxidation , and scavenging to . OH, DPPH. and ABTS+ . |
